Green Tea
Green tea, so different to the black tea drunk in the West, is unoxidised.
The flavours of a premium quality Green tea will vary in different regions
and whether the tea is picked at first or second flush, or even later.
Typically green tea will have a mellow aspargus-like flavour and a faintly
sweet aftertaste. The aroma is more subtle than oolong, less striking,
but its taste is richer and has a 'satisfying' effect on the palate. The
leaves are dry fried or gently roasted after picking to dry them before
oxidisation can take place. Little other processing occurs and the caffeine
level is low.
The flavours are drawn out at lower tempratures, typically 70°C,
so that the heat does not overly cook the leaves. Water heated in a kettle
should be used when the first waft of steam appears at the spout - rather
than at boiling point. Instructions are included with the tea sent to
you.
The tea expands and unravels to reveal full leaves when steeped and will
retain its flavour for several infusions, and because of its low caffeine
content, can be drunk all day.
