Oolong Tea
A premium quality Oolong will have a stunning floral bouquet and mellow
flavour. This never fails to impress!
Oolong tea is partially oxidised. The leaves are gently stressed after
picking to allow the flavour of the leaf oils to oxidize before heating
and drying. This increases the caffeine level, but also spectacularly
changes the flavour of the tea. The processing is midway between the unoxidised
green tea and the heavily oxidised black tea.
We offer only a select range of the very best Oolong teas. Tieguanyin
Oolong, made with a different variety of tea plant, has a powerful bouquet
reminiscent of honeysuckle scent.
Made with boiling water rather than the cooler temperature required of
green teas, Oolong tea is suited to the Western use of a kettle to make
a refreshing drink, or the hot water provided in most offices. The tea
unravels to reveal full leaves when steeped and will retain its flavour
for several infusions. |
